Ube Cupcakes are moist and soft ube flavored cupcakes with real ube jam/halaya. Topped with ube cream cheese frosting. This recipe is the ultimate treat as a snack or dessert.
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp ube flavor
- 1 cup milk
- 1/2 cup ube jam/halaya
Ube Cream Cheese Frosting
- 4 0z (112g) cream cheese, room temp
- 1/2 cup whipping cream (chilled)
- 1/4 cup powdered sugar
- 2 tsp ube flavor

Procedure:
- In a large bowl, combine and sift the dry ingredients.
- Mix well to combine.
- In a separate bowl, combine together the wet ingredients.
- Mix well. Add the ube jam/halaya.
- Beat until well blended.
- Combine the wet and dry ingredients.
- Mix until well incorporated. Do not overmix
- Scrape the side of the bowl.
- Line a muffin pan with cupcake liners.
- Scoop the batter about 1/4 cup each .
- Bake in a preheated oven at 175 C for 20-25 minutes.
- Place in a cooling rack to cool completely.
Ube Cream Cheese Frosting
- In a large bowl, beat the whipping cream on medium to high speed until thick and fluffy.
- Beat until stiff. Set aside.
- Beat cream cheese until light and fluffy.
- Put the whipped cream into the cream cheese mixture.
- Beat just to combine.
- Add the ube flavor. Beat until well blended.
- Add the powdered sugar. Beat until well combined.
- Scoop the cream cheese frosting into the piping bag.
- Pipe the frosting on top of the cupcakes.
