These Red Velvet Cupcakes are moist and soft cupcakes. Perfect combination with whipped cream cheese frosting on top. Easy and delicious!
Ingredients:
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- 2 tbsp unsweetened cocoa powder
- 1 ½ cups sugar
- ½ cup salted butter (melted)
- 2 large eggs
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup buttermilk (1 cup milk + 1 tbsp vinegar)
- 1 tsp vinegar
- 1 tbsp red food coloring
Cream Cheese Frosting
- 4 0z (112g) cream cheese (room temp)
- ½ cup whipping cream (chilled)
- ½ cup powdered sugar

Procedure:
- To make the buttermilk, just combine the milk and vinegar.
- In a large bowl, combine and sift the dry ingredients.
- Mix well and set aside.
- In a separate bowl, combine sugar and melted butter.
- Mix until well blended.
- Add eggs one at a time. Mix well.
- Add vanilla extract, buttermilk and vinegar. Mix to combine.
- Combine the wet and dry ingredients.
- Mix until well combined. Do not overmix.
- Add the red food coloring.
- Beat the batter until well blended.
- Line a muffin pan with cupcake liners.
- Scoop the batter about 1/4 cup each.
- Bake in a preheated oven at 350 F/ 175 C for 25 minutes.
- Place in a cooling rack and cool completely.
Cream Cheese Frosting
- In a large bowl, beat the whipping cream on medium to high speed until thick and fluffy. Set aside.
- Beat cream cheese until light and fluffy.
- Mix the whipped cream into the cream cheese mixture.
- Beat just to combine.
- Add the powdered sugar. Beat until well blended.
- Scoop the cream cheese frosting into the piping bag.
- Pipe the frosting on top of the cupcakes.
