Ingredients:
- 3 ¼ cups bread flour or all-purpose flour
- 2 tbsp sugar
- 1 cup lukewarm milk
- 2 tsp active dry yeast
- 1 pc egg (beaten)
- ⅓ cup sugar
- ½ tsp salt
- ¼ cup vegetable oil (add more for kneading)
- egg wash (1 pc beaten egg with 1 tsp water)
Filling (Option 1: Grated Coconut Filling)
- ¼ cup butter
- 2 cups grated coconut
- ¾ cup brown sugar
- 1 tsp vanilla extract
Filling (Option 2: Desiccated Coconut Filling)
- ¼ cup butter
- 2 cups desiccated coconut
- ¾ cup brown sugar
- ½ cup milk
- 1 tbsp flour
- 1 tsp vanilla extract

Procedures:
- In a large bowl, combine milk, sugar and yeast. Mix to combine. Cover and allow to sit for 5-8 minutes or until the mixture becomes foamy.
- Add beaten egg, sugar, salt and vegetable oil. Mix well.
- Then, add flour. Mix well until it forms into a dough.
- Transfer dough to a lightly greased kneading board.
- Add some oil on the dough and on your hands to prevent the dough from sticking.
- Knead the dough for 8-10 minutes or until it becomes smooth and elastic.
- Put some oil in a bowl. Place the dough and cover with clean towel.
- Allow to rise for 1 to 1 ½ hours or until it doubles in size.
- After proofing for 1 ½ hours, gently punch the dough to remove some of the gas bubbles formed by the yeast during rising.
- Roll the dough into a log. Cut into half. Roll the dough again and cut into pieces.
- Form each piece into a ball.
- Roll the other half of the dough and cut into pieces.
- Flatten each piece. Add about 1 tablespoon of coconut filling.
- Fold and pinch to seal the edges.
- Arrange each filled dough on a greased tray.
- Poke holes on top of each filled dough using a fork.
- Brush the top with egg wash.
- Cover with clean towel and let them rest for 30 minutes.
- Bake in a preheated oven at 340 F / 170 C for 18 minutes until golden brown.

Pan de Coco Filling
Option 1: Grated Coconut Filling
- In a pan, melt butter. Add grated coconut and brown sugar. Stir until combine.
- Add vanilla extract. Stir continuously and cook over low heat until the sugar is completely dissolved.
Option 2: Desiccated Coconut Filling
- In a pan, melt butter. Add desiccated coconut and brown sugar. Stir to combine.
- Combine milk and flour. Stir continuously and cook over low heat until the sugar is completely dissolved.
- Add vanilla extract.
