Ingredients:
Banana Bread Layer
- 3 large ripe bananas
- 1 ½ cups all purpose flour
- 2 large eggs
- ½ cup melted butter
- ⅔ cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon powder
- 1 tsp vanilla extract
- ½ tsp salt
- ½ cup milk (add 1 tsp lemon juice)
Cheesecake Layer
- 1 block cream cheese, room temp
- ½ cup sugar
- 1 tsp vanilla extract
- 1 cup hot milk (2 mins microwave)
- 1 tbsp gelatin powder
Chocolate or caramel syrup, for drizzling (optional)

Procedure:
- In a large bowl, sift and combine the dry ingredients: flour, baking powder, baking soda, salt and ground cinnamon. Mix well to combine. Set aside.
- Mashed bananas using a fork. Set aside.
- In a large bowl, sift and combine the wet ingredients: sugar, melted butter and eggs. Beat mixture until creamy.
- Add the mashed bananas, vanilla extract and milk with lemon juice. Beat just to combine.
- Then, add the dry ingredients into the wet mixture.
- Stir gently until the flour is incorporated. Beat until well combined. Do not overmix.
- Brush the bottom and the sides of the baking pan with butter.
- Place a parchment paper at the bottom of the pan.
- Pour the batter on the baking pan.
- Bake in a preheated oven at 350 F/ 180 C for 35 minutes or until toothpick inserted in center comes out clean.
- After baking, place in a cooling rack. Allow to cool completely.
Cheesecake
- In a large bowl, add the cream cheese, sugar, and vanilla. Beat until combined.
- Add the gelatin powder into the hot milk. Quickly stir until the gelatin powder is completely dissolved.
- Then, strain the gelatin mixture over the cream cheese.
- Beat again until smooth.
- Pour the cheesecake mixture over the baked banana bread.
- Chill for about 3 hours.
- Unmold and slice the cake.
- Drizzle with chocolate or caramel syrup (optional).
