This Leche Flan Banana Cake is a mash-up of our two favourite Filipino desserts which is leche flan and banana cake in one. Here’s my version of the trending Leche Flan Banana Cake. I tried making these using llanera molder for business idea purpose.
Ingredients:
- 1 ½ tbsp white sugar
- 2 large eggs
- 2 pcs egg whites
- 4 medium ripe/overripe bananas
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup sugar
- ½ cup melted butter
- 1 tsp vanilla extract
- ½ cup fresh/evaporated milk
- ½ tbsp vinegar
- ¼ tsp cream of tartar
- ¼ cup white sugar
Leche Flan
- 2 egg yolks
- 4 whole eggs
- 370ml evaporated milk
- 300ml condensed milk
- 1 tsp vanilla extract

Procedure:
- In a llanera molder, put 1 ½ tbsp white sugar. Caramelized sugar over low heat. Set aside.
Flan Layer
- In a large bowl, combine egg yolks and whole eggs.
- Add evaporated milk, condensed milk and vanilla extract. Mix until well combined.
- Strain mixture. Set aside.
Banana Cake
- Mash the bananas using a fork. Set aside
- To make the buttermilk, combine fresh milk and vinegar. Mix and set aside.
- In a large bowl, sift and combine together the dry ingredients: all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Mix to combine and set aside.
- In a separate bowl, combine the wet ingredients: sugar, butter, eggs, vanilla extract, buttermilk and mashed bananas.
- Combine wet and dry ingredients. Mix until well combined. Do not over mix. Set aside.
- In a large bowl, put egg whites. Add cream of tartar and sugar. Beat until stiff.
- Combine the batter and meringue. Mix well.
- Pour the leche flan mixture into the llanera molder.
- Scoop the batter and spread evenly to cover the leche flan.
- Pour hot water on the tray/pan for water bath method.
- Bake in a preheated oven at 190 C for about 50 minutes or until the toothpick inserted in the center becomes clean.
