Ube Sago Jelly is a combination of ube flavored jelly cubes and tapioca pearls in a creamy jelly mixture. It is a yummy, simple and very easy to prepare dessert for the holidays or any special occasions.
Ingredients:
Ube Jelly
- 3 cups water
- ¼ cup sugar
- 1 pack (25g) unflavored white jelly powder
- ½ -1 tbsp ube flavoring
Creamy Sago-Jelly Mixture
- 3 cups water
- 1 pack (25g) unflavored white jelly powder
- ¼ cup sugar
- 1 pack (250ml) all-purpose cream
- 1 cup condensed milk
- ½ cup small sago

Procedure:
- In a pot, combine white unflavored jelly powder, sugar, water and ube flavoring. Mix well.
- Cook over medium heat. Stir constantly.
- Bring to a gentle simmer.
- Pour in a clean container. Refrigerate for 30 minutes.
- Cut the jelly into cubes.
- In a pot, boil 4 cups of water.
- Add the small sago (tapioca pearls).
- Stir constantly to prevent sago from sticking together.
- Cook for 15 minutes over low heat. Turn off heat.
- Rinse with water. Drain and set aside.
Creamy Sago-Jelly Mixture
- In a pot, combine water, condensed milk, all-purpose cream, white jelly powder and sugar. Stir.
- Cook over medium heat. Stir constantly.
- Bring to a gentle simmer.
- Add the cooked sago (tapioca pearls).
- Remove from heat.
Assembly
- In a bundt pan or in any clean container, put some of the cubed jelly.
- Pour some of the creamy sago-jelly mixture.
- Add some of the cubed jelly. Then, creamy sago-jelly mixture.
- Add the remaining jelly and creamy sago-jelly mixture.
- Refrigerate for 2-3 hours.
